seriously, it's really simple
If you're saying that you don't really care about something - you should say, "I couldn't care less" because you're saying that you care so little, that it would be impossible for you to care any less.
If you say, "I could care less" you're saying the opposite of what you really mean.

Shouldn't it be: eat your cake and have it too? I know it doesn't sound right, but it makes more sense (to me at least).

I agree, but saying "I could care less" is not the exact opposite of saying "I couldn't care less." Because you could say, "I could care less" and still not care very much...you could just care a little less.
